Story
Finding strawberry notes in coffee is very, very rare.

We're tasting coffees every single day trying to find the absolute best of the best and when this SL 28 varietal from Las Lajas came across our cupping table, we knew we had to share it with you.

This coffee, which we named Strawberries and Cream, tastes like strawberries dipped in creamy milk chocolate. These flavors were achieved with an anaerobic natural drying process of the coffee beans.

This means the beans were put out to dry with the coffee fruit still intact to the bean, allowing them to suck up as much of the natural fruit sugars as possible.

Brewing Fundamentals

Brewing ratio
For hot coffee, a good starting point is 1 part coffee to 15 parts water. For cold brew, we recommend 1 part coffee to 13 parts water.

Grind size
Ideally, grind just before brewing. Grind size will vary based on a number of factors, including brewing method. As a start, grind to the size of table salt. Tastes weak? Grind finer. Tastes bitter? Grind coarser.

Brewing water
Ideally, use quality filtered or spring water for brewing. Water temperature at 200℉ is a good starting point. Tastes weak? Increase temperature. Tastes bitter? Reduce temperature
