The Comarca has become a special place to us, and we are excited to share the coffee grown there. Large coffee distributors have taken advantage of many coffee farms in the region, buying the coffee for pennies per pound.
As farms in the Comarca break out of producing commercial coffee for large conglomerates and move into producing specialty coffee, we are honored to have their trust to share their hard work with the world. This is a unique coffee that truly makes a difference. We hope you love it.

Brewing ratio
For hot coffee, a good starting point is 1 part coffee to 15 parts water. For cold brew, we recommend 1 part coffee to 13 parts water.
Grind size
Ideally, grind just before brewing. Grind size will vary based on a number of factors, including brewing method. As a start, grind to the size of table salt. Tastes weak? Grind finer. Tastes bitter? Grind coarser.
Brewing water
Ideally, use quality filtered or spring water for brewing. Water temperature at 200℉ is a good starting point. Tastes weak? Increase temperature. Tastes bitter? Reduce temperature
